Effects of Fermented Camel Milk Supplemented with Sidr Fruit (Ziziphus spina-christi L.) Pulp on Hyperglycemia in Streptozotocin-Induced Diabetic Rats

Diabetes is one of the most common chronic metabolic diseases, and its occurrence rate has increased in recent decades. Sidr (Ziziphus spina-christi L.) a traditional herbaceous medicinal plant. In addition to good flavor, sidr antidiabetic, anti-inflammatory, sedative, analgesic, hypoglycemic activities. Camel milk high nutritional health value, but salty taste remains main drawback relation organoleptic properties. The production flavored or fortified camel products mask can be very beneficial. This study aimed investigate effects fruit pulp (SFP) on functional properties fermented milk. SFP was added at rates 5%, 10%, 15%, followed by selection best-fermented product terms (camel supplemented with 15% SFP), an evaluation activity streptozotocin (STZ)-induced diabetic rats. Thirty-two male adult albino rats (weighing 150–185 g) were divided into four groups: Group 1, nontreated nondiabetic (negative control); 2, given STZ (60 mg/kg body weight; positive 3, fed basal diet (10 g/day); 4, g/day). results revealed that supplementation total solids, protein, ash, fiber, viscosity, phenolic content, antioxidant activity, which proportional ratio.
